📖 Understanding USDA Market Reports

Cash Price

What elevators/buyers are actually paying today. Equals futures ± basis.

Basis

Cash price minus nearest futures price. Reflects local supply/demand, transport costs.

Bid vs Offer

Bid = what buyer will pay. Offer = what seller wants. Spread = negotiation room.

Choice vs Select

Beef quality grades. Choice is higher marbling. Choice-Select spread indicates consumer demand.

Cutout Value

Calculated wholesale price of a carcass. Tracks packer profitability.

Class III Milk

Price based on cheese & whey. Determines most WI dairy farmer payments.

Block vs Barrel

Two forms of cheese traded at CME. Blocks = retail, Barrels = processors.

Dressed Weight

Carcass weight after processing. Cattle: ~63% of live weight. Hogs: ~75%.

📅 Report Timing: Most grain reports release daily. Livestock reports are weekly (usually Thursday/Friday). Dairy reports are weekly to monthly depending on type.
